Unlike the majority of RP players, I use many, many UI Mods. But they're so stupefyingly useful ^_^
autoexec_bat - establishes a series of commands to run each session when you log in.
BattleCry - allows you to designate vocilazations and emotes to occur on specified events a certain percent of the time. (eg. spellcasts, combat stance shifts, racial ability use, etc.)
Bongos - toolbar customization, a replacement for the staid Griffons that can show a max of one bar at a time. I couldn't live without this one.
CensusPlus - It's a much endowed statistics tracker that sweeps all players online and gives numbers. /Who on steroids.
ChatBar - a small bar above your chat with convienient chat options
ChatLog - Allows logging of the independent chat channels, and additional chat control.
ChatMOD - Chat and UI enhancement, timestamps, colors, clickable URLs, mousewheel scroll, and other spiffy stuff
Demonic Knowledge - calculates Spell Damage bonus based on current pet
diTooltip - Tooltip modification addon - reposition, add some info
DurabilityStatus - tracks equipment durability and estimates repair costs
Extended QuestLog - an expanded Quest log with customizable options and a larger viewing space
flagRSP - (as above)
GrimoireKeeper - tracks what Grimoires your various Demons have learned to save time when lvling
Improved Error Frame - concentrates any pesky error messages into a hidable window on the miniMap
MetaHud - Heads Up Display, spiffy art and options.
MetaMap - Worldmap and Instance map Addon, map coordinate system, now with Resource node tracking and Questlog. I couldn't live without this one.
MinimapZoom - allows mousewheel zoom on the minimap
Mobinfo-2 - Tracks information about anything and everything you attack, as well as estimating HP based on damage done, estimate is refined the more you kill a mob. Interfaces with MetaHud
OneBag - Unified bag display, viewable vault. I couldn't live without this one.
Recipe Radar - shows locations of vendors with Recipes all over the world.
Sell Value - tracks vendor sell value for any item vendored (makes dropping stuff a snap when bags are full)
Soundtrack - Allows custom music playlists to be implemented for most ingame events: Zones, Battle, Flight, Mounted, Death, Ghost, etc. OMG I couldn't live without this.
X-Perl Unitframes - the most customizable unit frames I've seen, and the most useful as well - lots of data presented in a small package.
TITAN Bar - Control Panel/Infobar at top/bottom of screen. Multiple Addons supported for easy access to info. (Some of the following are folded into the TITAN release)

-- Bag: bag slots / free slots display
-- Clock: System clock, adjustable for timezone
-- Coords: Displays Zone (or subzone) and location coordinates
-- Factions: One-stop tooltip faction tracking
-- Guild: Tooltip guild tracking
-- ItemBonuses: Tracks Stat bonuses totaled from all equips
-- LootType: Shows the type of loot system your party is using
-- Mail: Mail tracking on the bar
-- Money: How much lucre you've got, and how much you've made or lost this session and per hour.
-- Ore: Reagent tracking (Has Soulshard support too)
-- Performance: Framerate, Latency, connection status display.
-- Repair: As DurabilityStatus above, but displayted on the TITAN bar
-- Rider: swappage of equips for riding bumps done for you
-- Skills: Display xxx/300 or level equilivants for your skills set (Tailoring/Blacksmithing/Fishing/etc.)
-- XP: XP gained per hour per session, and rested XP display.
A special note: The ChatLog addon has only one slash command to interface, and that's /clog
